Greek Salad “Horiatiki”

A sun-drenched Mediterranean classic bursting with crisp, vibrant freshness. Juicy tomatoes, cool cucumbers, and briny olives tangle under a rich block of creamy feta and a golden drizzle of extra virgin olive oil.
Ingredients
2 cups medley tomatoes, halved
2 cucumbers, sliced or chopped
1 white onion, thinly sliced
1 banana chilli, sliced
1/2 cup Kalamata olives
200 g feta cheese
1 tsp dried oregano
3 tbsp extra virgin olive oil
Salt and black pepper, to taste
Method
In a large bowl, combine the tomatoes, cucumbers, onion, banana chilli, and Kalamata olives.
Drizzle with olive oil and season lightly with salt and black pepper.
Toss gently to combine.
Place the feta on top, either as a whole block or crumbled.
Sprinkle generously with oregano.
Finish with an extra drizzle of olive oil and serve fresh.
