Greek Lemon Potatoes

Golden, oven-roasted potato wedges infused with fresh lemon juice, rich olive oil, and fragrant wild oregano. Crispy and caramelized on the outside, yet melt-in-your-mouth soft on the inside.
Ingredients
1.5 kg Desiree potatoes
1/3 cup extra virgin olive oil
Juice of 2 lemons
1 tbsp dried oregano
1 tsp salt
1/2 tsp black pepper
Method
Preheat the oven to 180°C.
Peel the Desiree potatoes and cut them into wedges.
Place the potatoes in a large baking dish.
In a bowl, whisk together the olive oil, lemon juice,
oregano, salt and pepper.
Pour the mixture over the potatoes and toss well to coat evenly.
Roast for 1 hour to 1 hour 30 minutes, turning the potatoes
halfway through cooking.
Spoon the pan juices over the potatoes during roasting so they become golden, soft inside, and crispy on the edges.
