Fragrant Okra Curry

Warm, saucy, and packed with spice—this okra curry is winter comfort in a bowl. It transforms humble ingredients into a deeply aromatic, one-pan wonder that’s perfect for chilly nights. Serve it with fluffy rice, warm flatbread, or enjoy it straight from the bowl by the fire. Simple, soulful, and made to warm you from the inside out.

Ingredients

350g okra (fresh or frozen)

1 tbsp olive oil

1 red onion, finely sliced

3 cloves garlic, minced

1-inch piece ginger, peeled and grated

1 tsp ground turmeric

1 tsp ground cumin

1 tsp chilli powder (adjust to taste)

2 tsp ground coriander

2 tbsp tomato paste

½ cup coconut milk

¼ cup water

Salt & pepper, to taste

Fresh coriander & chilli flakes, to garnish (optional)

Method

  1. Heat the olive oil in a large pan over medium heat. Add the red onion and cook until soft and fragrant, about 5 minutes.

  2. Stir in the garlic and ginger, cooking for another 1–2 minutes.

  3. Add the turmeric, cumin, chilli powder, and coriander. Toast the spices for 1 minute until fragrant.

  4. Stir in the tomato paste, coconut milk, and water, mixing until smooth.

  5. Add the okra, season with salt and pepper, and simmer for 12–15 minutes until tender and the sauce has thickened.

  6. Garnish with fresh coriander and chilli flakes, if using.
