Autumn Tomato & Bocconcini Salad

Fresh, vibrant, and bursting with flavour, this Autumn tomato salad is the perfect way to celebrate the season’s sweet, juicy tomatoes. A mix of vine-ripened, medley, and tiny tomatoes creates a colourful base, while creamy baby bocconcini adds richness. Finished with fragrant basil, balsamic vinegar, and olive oil, this salad is simple, fresh, and made to be shared.

Ingredients

250g vine-ripened baby tomatoes, halved

250g medley tomatoes, halved

150g tiny tomatoes, left whole or halved

1 small Spanish onion, finely sliced

1 clove garlic, finely grated

200g baby bocconcini, torn in half

2 tbsp balsamic vinegar

3 tbsp extra virgin olive oil

Handful of fresh basil leaves, torn

Salt and black pepper, to taste

Method

  1. In a large bowl, toss together the vine-ripened, medley, and tiny tomatoes with the Spanish onion and garlic.

  2. Drizzle with the balsamic vinegar and olive oil, then season with salt and black pepper. Let it sit for 5 minutes to allow the flavours to meld.

  3. Add the baby bocconcini and gently toss to combine.

  4. Scatter over the fresh basil leaves just before serving.
